Chocolate Almond Popcorn Squares

When I was a kid I LOVED Rice Crispies Squares! “Can we make some, mom? Can we make some?” I’m sure I drove her crazy. Today as an adult, of course, this is not the slightest bit interesting. However, what about the same idea (sort of) made with popcorn, almond butter, chopped dried apricots, and chocolate chips? Now you have my attention. (And, lucky for me, I have chocolate chips left over from my last culinary adventure!)

Chocolate Almond Popcorn Squares



  1. In a large mixing bowl, combine popcorn with the chopped almonds, cinnamon and apricots. Set aside.
  2. In a small saucepan, heat the honey and maple syrup over medium heat until mixture bubbles. Stir in the almond butter. After the almond butter melts, the mixture will look smooth and slightly frothy. Cook for about another 30 seconds, continuing to stir. 
  3. Pour syrup over popcorn mixture and mix gently with a wooden spoon. Stir in chocolate chips. Pour mixture into square pan and flatten firmly with spatula. 
  4. Cool in refrigerator at least 30 minutes. Cut into squares to serve.
