What’s for Breakfast? Nut Butter!

For me, nut butters have become part of my perfect breakfast! They’re nutritious—full of protein, vitamins, minerals and helpful fiber and fats. But who am I kidding, that’s not the only reason I eat them! Have you tried Maisie Jane’s new line of flavored handcrafted nut butters yet? They’re delicious! More like dessert than something your dietician would make you eat but far better for you than the alternatives.

For example, do you put maple syrup on your pancakes? I certainly do—or I did before I discovered nut butter and fruit! And if you use butter and some sort of jelly on your toast, try a little nut butter with bananas or mashed berries instead. It’s so good!

I’m on the fence as to whether the carbs in pancakes or toast are good for me or not, but I have discovered that I lose weight easier (my main goal in that) when I relax and enjoy the things I love to eat! I think putting myself in a deprived mindset must make my brain think I’m starving (or concerned about that) so it holds on to the weight to help me through the famine I must obviously be in. When I add in my favorite forbidden foods once a week or so— and really enjoy them—I’m surprised over and over again that those are times during the week when I drop the most weight! That sounds wrong, doesn’t it? That’s backwards. But there’s something about resetting my body’s expectations that seems to work for me. As long as I don’t go so far as to throw all caution and common sense to the wind and indulge all week long. Then, of course, the approach doesn’t work anymore at all.

So, let me recommend my favorite indulgence day breakfast treat (don’t call it a “cheat” day—that’s the wrong mindset!):

Pancakes or waffles drizzled with hot nut butter and fruit!

One question to answer before we begin: how do you drizzle nut butter after it’s been in the fridge? Pop it into the microwave for about 10 seconds or so. That usually works well enough but if you’d prefer a breakfast topping that’s more like a sauce, use a little hot water from your tea kettle and whisk it up with your nut butter in a bowl. I think 1/8 cup of hot water to 1/4 cup of nut butter is about right but some people recommend equal portions of each.

This yummy nut butter combines sea salt, brown rice syrup, and organic dry roasted cashews. But try adding coconut flakes and sliced mangos (or frozen mango chunks defrosted in the microwave) and now you have a semi-tropical experiment in amazing! Want to get crazy daring? Add a little (a pinch) of hot chile pepper to the mix. Now it’s somewhat like Thai cuisine for breakfast. Whoa!

Maisie Jane’s Chocolate Hazelnut Butter with Strawberries and Pistachios

Maisie Jane’s Chocolate Hazelnut Butter uses dry-roasted hazelnuts as the number one ingredient. It contains far less sugar than the competing brands and no added emulsifiers or preservatives. Drizzle that on top of your pancakes or waffles and add sliced strawberries and chopped pistachios for a wonderful treat that’s almost becoming a tradition for some people I know!

Our Organic Sea Salted Dark Chocolate Almond Butter is probably my favorite new nut butter addition. You basically just want to eat this one straight out of the jar! But get creative and have some for breakfast indulgence day. It is SO good. What makes this breakfast combo work for me is the combination of salty and sweet. I always lightly sauté the banana slices in butter first, add them to my pancake or waffles and then drizzle the Dark Chocolate Almond Butter on top. Try a sprinkling of raspberries on top of that for a nice variation!

Now we’re getting into Elvis territory. Supposedly he liked combining peanut butter with bananas with bacon! But it’s really great with Maisie Jane’s Almond Butter instead mixed with just a touch of maple syrup. Add 2-3 slices of bacon to your waffle or pancakes before adding the bananas and nut butter on top.
