Today’s recipe comes courtesy of our friends at Blissful Basil, the place to go for wonderful, healthy, plant-based recipes! I got a kick out of her reason for not including this recipe in her cookbook: “Does the world really need another chocolate chip cookie recipe?” Well, maybe not, but a vegan almond butter chocolate chip cookie? Sure! Why not?
The reason this appealed to me today is because I haven’t found regular flour in the grocery store lately because of the country’s new-found obsession with home baking! But, because I went through a short-lived gluten-free experiment for awhile, I have an unusual amount of alternative flours, like oat flour, on my shelves (and so did Trader Joe’s!). Plus I thought I’d experiment with coconut sugar when I saw that regular sugar was temporarily out at the grocery store. It turns out that is quite good.
If you can’t find oat flour at the store, that’s not a big deal. You must have oatmeal on your shelf, don’t you? Just grind that up to something resembling flour in a coffee grinder. The extra coffee in there doesn’t even have to be cleaned out—that flavor would go nicely in this recipe if you can taste it at all.
