Using Almonds to Go Gluten-Free

Do you need to watch your diet because of celiac disease or a gluten sensitivity? Or perhaps, like me, do you gain weight with every bagel or slice of bread and want to see what giving up simple carbs (which are frequently gluten-rich) will do? In that case, almonds could be your new best friend.

When I did my gluten-free experiment I felt quite challenged to figure out what to make for dinner. . .or lunch . . . or breakfast. I was shocked at what a big part of my diet bread and pasta happened to be! I immediately went shopping in what I used to call the “weird food” section of the grocery store and I’m glad I did. It opened up a whole new world of interesting and delicious things to try. So even though I eventually added some gluten carbs back into my diet, my food choices have expanded so much I don’t feel the need to go overboard on the gluten/carb end of the spectrum anymore.

Almond Flour

The first thing I tried was almond flour. I don’t buy that anymore because it is SO easy to make fresh. Most recipes call for blanched almonds but I have never bothered. Natural skin-on, unsalted, works best unless you want a lighter look for some special purpose. Now you have the most important tool in your arsenal. With almond flour (perhaps mixed with other gluten-free flours like coconut or soy) you can make delicious high protein pancakes, bread, and some pretty amazing desserts!. You can also use it in place of bread crumbs on chicken or fish.

Almond Butter

Don’t forget to put almond butter on your gluten-free bread or pancakes! Maisie Jane’s Almond Butter is made with one ingredient—almonds.
