Salted Almond Butter Chocolate Chip Cookies

You know what never ceases to disappoint and pretty much sounds good at any given moment? Chocolate chip cookies.

I mean, come on! Maybe it’s the fact that it’s that time of the night right now when the sweet tooth kicks in and I start rummaging around in the cupboards in hopes of some treasure. Or, maybe its the nostalgic memory of helping my mom make cookies when she was craving something to go with her popcorn. But we can all agree that chocolate chip cookies are a classic delight that we almost always have all the ingredients for in our kitchen.  

Well, we are about to let you in on a little secret: nut butter in your cookie dough.

We don’t even care what kind, just TRY IT. Almond butter, cashew butter, peanut butter, they all work. We promise it wont disappoint.  If you’re someone that likes an ooey gooey center than prepare yourself, because adding nut butter to your cookie recipe will sure make for a decadent and nutty flavor. This particular recipe was created by Beyond the Butter and it’s just one of those cookies that when you bite into it, it hits all the senses. As always with cookies recipes, you can add or leave out any of the extras like nuts and chocolate. Get creative and try any kind of nuts or flavor of chocolate! Ingredients:

  1. ½ cup All-Purpose Flour
  2. ½ teaspoon Baking Powder
  3. ¼ teaspoon Baking Soda
  4. ¼ teaspoon Salt
  5. 2 tablespoons Unsalted Butterroom temperature
  6. ¼ cup  Maisie Jane’s Creamy Almond Butter
  7. ¼ cup Granulated Sugar
  8.  cup Light Brown Sugarlightly packed
  9. 1 Large Egg
  10. 1 teaspoon Vanilla Extract
  11. ½ cup Semi-Sweet Chocolate Chips
  12. ½ cup Chopped Pecans
  13. Sea Salt Flakesfor sprinkling

Instructions: 

  1. In a medium-size mixing bowl, whisk together the all-purpose flour, baking powder, baking soda and salt until well blended. Set to the side.
  2. Using your hand held mixer or stand mixer fitted with the paddle attachment, beat the unsalted butter until soft and creamy (about 1-2 minutes).
  3. Add in the almond butter, granulated sugar, and light brown sugar, and mix together until well blended.
  4. Add in the egg and vanilla extract.
  5. Reduce the mixer speed to low, gradually adding in the whisked dry ingredients, mixing until just combined. Scrape down the sides of the mixing bowl we needed.
  6. With a spatula, fold in the semi-sweet chocolate chips and chopped pecans.
  7. Scoop the cookie dough into 6 large size balls and place them onto the cookie sheet leaving at least 2 inches between them. Sprinkle with sea salt flakes.
  8. Bake for 14-16 minutes at 350ºF. The cookies should be soft in the middle with the edges being a light-medium golden brown.
  9. Remove from oven and allow to cool on the baking sheet for 5 minutes. Top with more chocolate chips and pecans, if desired.
  10. Using a large serving spatula, transfer the cookies to a wire cooling rack to cool completely.
