It’s Official: We Refuse to Cook Breakfast This Week

There was a time when my friends back east used to ask me, “So, how’s sunny California?” And I’d reply, “I have no idea. I don’t live there.” My home is actually in a coastal fog belt. Usually I’m freezing in the summertime. 

Ah, for the good old days of 50-degree mornings.

These past few days, much of our state has been experiencing three-digit temperatures and rolling power outages, with no end in sight. Therefore, I’m not cooking anything for breakfast until the heat drops to a balmy 89 degrees.

Strawberry Almond Butter Overnight Oats

Enter our friend Ashley at Blissful Basil, whose website full of plant-based goodies you need to read with regularity. She’s saving my life this week with her recipe for Strawberry Almond Butter Overnight Oats. Combining ingredients you probably already have on hand, plus fresh fruit, it’s wonderful to wake up: oatmeal that you don’t have to prepare on the stove or in the microwave. Yeah!

Of course, we make ours with the award-winning, one-ingredient Maisie Jane’s Smooth Almond Butter, along with strawberry preserves  (great to have on hand when you have no fridge), organic rolled oats and oat squeezin’s, but you can used any kind of plant milk and plant-based yogurt, any all sorts of berry preserves, including the home-made strawberry compote included in Ashley’s recipe. (We’re not cooking, as I said, but if you have power and AC, go for it!)

As for the add-ons, Ashley suggests fresh bananas, granola and all manner of nuts and seeds. I can’t have enough maple syrup, so that’s my go-to drizzle. I like mini chocolate chips too. (Who doesn’t?)

Whether using what you have or getting creative with seasonal products, you can make so many variations of this breakfast treat. And you can be sure I will, until the weather changes.
