Healthy Cashew Butter Twix Bars

In honor of “Nut Butter Bananza” month we have another amazing nut butter dessert coming your way!

Since we usually show more love to our smooth and crunchy almond butter babes, we thought this week we could shed some light on our creamy, decadent cashew butter. All nut butters are pretty much inter-changeable,  so if you are a true almond butter groupie you can stick to what you know and use that instead. 

The reason we love our cashew butter is because it truly is the creamiest of the butters. So, if you are going for a smooth texture in your baking or spreading as we are for the “caramel” in these Twix, we recommend the magic of the cashew! 

We know this recipe says “healthy,” but in all honestly, you wouldn’t know it if we didn’t tell you! This is the perfect dessert created by Purely Elizabeth for those who aren’t a fan of overly sweet, and prefer the dynamic duo of sweet and salty. 

 

 

Ingredients

Bottom Layer (Crust):

¾ bag of Purely Elizabeth Original Ancient Grain Granola (8oz)

cup coconut oil 

(If you don’t have granola and are feeling inspired, making an oatmeal crust is quite easy. See below for instructions)

1 1/2 cup rolled oats

5 dates

1/4 cup cocnut oil

pinch of salt

*blend together until smooth and dates are distributed well

Caramel Layer:

½ cup Maisie Janes Cashew Butter OR Maisie Janes Almond Butter

¼ cup coconut oil

¼ cup maple syrup

1 tsp vanilla extract

Pinch of sea salt

Chocolate Layer:

½ cup chocolate chips or 2.5oz of a chocolate bar

1 tbsp coconut oil

 

Directions

1.  Line a 9×5 baking loaf pan with parchment paper. In a food processor, pulse granola and coconut oil until a coarse meal forms. Transfer to the pan and create an even layer. Place in the freezer while you prep the caramel layer.

2.  Combine all caramel ingredients in a small saucepan over medium-low heat and continuously whisk until all ingredients liquify and you begin to notice the sauce thickening. Do not walk away from the sauce as it can easily burn! Remove from the burner and cool completely.

3.  Once cool, pour onto granola crust and place in the freezer while you prep the chocolate layer. In a small bowl, combine chocolate and coconut oil and microwave for 20-30 seconds. Once cooled, pour over the caramel layer, top with remaining granola and place in the freezer for 30 minutes to harden.
