Cinnamon Almond Pastry Swirls—bring them to Easter brunch!

Is there anything more luxurious than a slow weekend brunch with cinnamon rolls or some other yummy breakfast pastry and a hot cup of coffee? And I really value the delight of a baked good fresh from the oven that smells and tastes so good it entices everyone out of bed to join me. These Cinnamon Almond Pastry Swirls fit the bill perfectly. They combine my favorite breakfast ingredients: cinnamon and chopped almonds—yum! But even better, using store-bought frozen puff pastry makes it so easy and fun. You just have to give them a try.

Cinnamon Almond Pastry Swirls


  • 1/2 cup natural almonds, well-chopped
  • 1/4 cup brown sugar
  • 1 TBSP melted butter, plus more for greasing pan
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 (17.3-ounce) package puff pastry
  • Flour for work surface


  1. Preheat oven to 400F. Thaw pastry dough according to package instructions and lightly butter a baking sheet.
  2. In a small bowl, combine the almonds, brown sugar, butter, vanilla extract and cinnamon.
  3. Carefully unroll dough onto a lightly floured work surface. Spread almond mixture all over it, to the edges, and roll up tightly.
  4. Cut roll into 1-inch pieces and lay on prepared baking sheet swirl-side up.
  5. Bake for 16 minutes or until golden brown and puffed.  
  6. Serve warm. Refrigerate leftovers —if you have any— in a sealed container for up to 3 days.
