The Love & Lemons website is one of my favorite go-to resources for plant-based recipes and food guidance. The recipes are so clearly written and accompanied by delectable photos. Bestselling authors Jeanine and Jack often include nuts in their innovative recipes. I suggest you subscribe to their site and buy their new cookbook too, which includes recipes you won’t find on their blog. But of course, their blog has some amazing finds, one of which they have graciously allowed us at Maisie Jane’s to share with you.

Arugula Salad with Quinoa, Almonds, Apricot & Avocado

Here’s a great cold meal in a bowl for a hot summer/early fall luncheon:  a sweet combination of spicy arugula, dried apricots, fruity olive oil, delectable spices and herbs, nutritious quinoa and of course, almonds.
