Almond Popsicle Treats for Summertime Fun!

The temperatures have soared into the triple digits here in Chico, as it does every summer. That means it’s homemade popsicle time!

I discovered how easy it is to make homemade popsicles last year when I came across some popsicle molds at the local Dollar store. Puree your favorite fruits, add yogurt, coconut milk or other ingredients, pour it into your molds, and put them in the freezer. A few hours later, you have a delicious summertime treat! Healthier than store bought, too, because you control how much sugar to add, if any!

Of course, it wasn’t long before I was thinking about whether I could make something delicious with almond butter or almond milk. Of course, you can! In fact, I was able to find a number of delicious recipes from our friends at the Almond Board of California. Let me share a few of my favorites with you!

Almond JoysiclesAlmond Joysicles

This combines my absolutely favorite combination of ingredients: chocolate syrup, coconut, and toasted almonds! The recipe calls for cream of coconut —yum!—and shredded coconut. You’ll also need almond milk, but that’s easy! Just make your own using the recipe I shared a couple of weeks ago. And don’t bother toasting your own almonds. Almond Butter and Jelly PopsiclesAlmond Butter and Jelly Popsicles

That name didn’t sound good to me as a frozen treat, but then I discovered that there’s no “jelly” in these popsicles at all. Instead you use fresh raspberries or sliced strawberries. You can puree them if you really want or add them as is for a delicious and more gourmet-feeling experience. The recipe calls for unsalted almond butter—use the smooth kind, either natural or organic. You’ll also use Greek yogurt and unsweetened almond milk. It sounds so good, I want one now!

Fudgesicles only made better with the delicious nutritious power of almond butter! You’ll need chocolate syrup and almond milk to make these, too. And add some roasted finely chopped nuts for something wonderful. It makes me nostalgic for my days of running after the ice cream truck in my neighborhood. I bet your kids will love this good-for-you recipe, too.
