A Healthier Treat for Your Cheat: Almond Butter Cups [Recipe]

The sad part is that it isn’t always good news to your taste buds because sweets are usually the first part of your diet to go out the window. This doesn’t mean that you can never eat sweets again, it just means that you have to be smart about the kind of sweets you splurge on when you feel like having a cheat day.

There are ways though that your “cheat day” doesn’t have to be so bad. Dark chocolate has proven to be better for you than either milk or white chocolate and is just as tasty. Almond butter is healthier for you than peanut butter and, again, is just as tasty. Now, which treat could use both of these ingredients in? A healthier version of Reese’s Pieces! So here’s a recipe for making almond butter cups.

This recipe makes 18 almond butter cups.

Ingredients

  • 1 (10oz) bag dark chocolate chips
  • 1 tablespoon shortening
    • you can substitute the shortening with the same amount of coconut oil
  • ½ cup smooth almond butter
  • 2 sheets graham crackers, crushed up

Directions

  • Fill a mini cupcake pan with 18 paper liners
  • In a microwave-safe bowl, add the dark chocolate and shortening or coconut oil substitute and heat in 30-second intervals. Make sure to stir after each 30 seconds, until the chocolate is completely melted and the shortening is fully incorporated.
  • Use a spoon to add just enough chocolate to coat the bottom of the paper liner. Take a toothpick and swirl it along the sides of the liners, so the chocolate coats the sides slightly. Refrigerate the pan for 30 minutes.
  • Meanwhile, mix together the almond butter and crushed graham crackers. Evenly distribute the almond butter mixture among the chocolate-filled liners. Top with the remaining chocolate (microwave if necessary) and refrigerate for a minimum of 30 minutes before serving.
  • The rest should be refrigerated until use.
