Almond Butter Crunch Cookies

What’s your favorite kind of cookie? When I was a kid it was peanut butter cookies. I even remember learning to make them myself in kindergarten—I was so excited! My favorite part was squishing the cookie dough down with a fork to make a cross-hatch pattern. (That made it art!) I begged to make peanut butter cookies as often as possible. But today I never eat them anymore. I love almond butter way too much and also happen to love cookies studded with crunchy nuts (which I certainly didn’t add to my cookies as a child).

So today I’m sharing this recipe for Almond Butter Crunch Cookies from the Almond Board of California because it fits all my qualifications for the perfect cookie today except for one thing. No chocolate chips! Well, be my guest and add some. As I’m writing this blog post tonight, dark chocolate chips are calling my name. I might have to make these just so I can add some and see how it works out!

Almond Butter Crunch Cookies



  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  2. In a large bowl, cream together almond butter, butter, brown sugar, egg and almond extract until light and fluffy.
  3. In a separate bowl, combine flour, baking soda and salt. Add flour into the creamed mixture slowly until well blended. Stir in diced almonds. Dough will be very crumbly: cover with plastic wrap and refrigerate for 30 minutes to firm it up.
  4. Form the dough into 1-inch balls and place on the baking  sheet; flatten with a fork creating cross hatch pattern. Bake 12-15 minutes, until lightly browned.
  5. Cool on the baking pan for a few minutes before transferring cookies to a  wire rack. When cool, store in airtight container.
