Vegan Cheese Spread Made from Nuts (Recipe)

Was one of your New Year’s Resolutions to go vegan? Good for you! A vegan diet can help you lose weight and improve your health as well as being good for those whose hearts just can’t handle eating any more animals. But, if you’re like me, one of the biggest stumbling blocks for giving up animal products isn’t just giving up meat, it’s giving up cheese, too! Waaa! Do I really have to do that? How will I live without my absolutely favorite melty yummy cheese snacks?!!!

Well, maybe I don’t have to! Our friends at Blissful Basil recently reviewed a book called This Cheese is Nuts! by Julie Piatt. It’s filled with wonderful ways to make all kinds of wonderful vegan cheeses using nuts as the key ingredient. Today’s recipe caught my eye because it looked SO easy and fast to make. After soaking the almonds overnight, it takes just ten minutes! You just combine the ingredients in a food processor. And it is just the kind of food I love: a spread to slather on crackers or go gluten-free with something more healthy to eat!

Vegan Smoked Almond Cheddar Spread

Ingredients

  • 2 cups raw almonds
  • ½ to ¾ cup pimientos or peeled roasted red peppers from a jar, plus ½ to ¾ cup of the liquid it comes packed in
  • ¼ cup nutritional yeast
  • 1 ¾ teaspoons smoked sea salt
  • 1 teaspoon garlic powder
