As Maisie Jane’s celebrates its 30th anniversary, we’re diving deep into a world filled with delectable almond flavors. What better way to celebrate than to share three of Maisie’s all-time favorite recipes that have stood the test of time and brought families around the table? From Almond Biscotti that pairs perfectly with your morning coffee to a refreshing Apple Almond Farro Salad, these recipes are a testament to the magic of almonds and the love of family gatherings.

Almond Biscotti by Aunt Tisha

This timeless classic is sure to leave your guests craving more. Its crisp texture and nutty flavor make it a perfect companion for your favorite brew. 

Ingredients: 

– 4 Cups Flour 

– 2 tsp. baking powder (heaping) 

– Pinch salt 

– 2 cubes butter 

– 1 ¾ Cups sugar 

– 4 eggs, separated 

– 1 tsp Almond extract 

– 1 TBS brandy 

– 1 tsp. vanilla extract 

– 1 ½ TBS anise seed, crushed 

– 1 Cup chopped Maisie Jane’s Almonds 

Directions:  

  1. Cream butter and sugar. Add egg yolks and blend.
  2. Fold in whipped egg whites.
  3. Gradually add pre-mixed dry ingredients, blending until mixed.
  4. Stir in all flavorings.
  5. Finally, add almonds.
  6. Knead briefly on a floured surface. Divide into three 12-inch logs and flatten into an oval shape.
  7. Bake at 350°F for 28-30 minutes.
  8. Slice diagonally into 1 ½ wide strips and bake again at 400°F for 5 minutes or until golden brown.
  9. Store in an airtight container. These can be enjoyed for months!

Cooking Tip: When making biscotti, ensure your knife is sharp for clean cuts and avoid crumbling.

Almond Butter Pumpkin Muffins with Chocolate Chips 

Embrace the essence of fall with these mouthwatering muffins that are sure to be a hit at breakfast or as a snack! 

Ingredients: 

– 1 Cup Maisie Jane’s Smooth Almond Butter 

– 1 Cup Pumpkin Puree 

– 3 farm-fresh eggs 

– ¼ Cup Maisie Jane’s Honey 

– 2 tsp. Baking soda 

– 1 Cup Almond Flour 

– ¾ tsp. sea salt 

– 1 tsp. ground cinnamon 

– ¾ Cups Dark Chocolate chips 

Directions: 

  1. Preheat oven to 400°F.
  2. Whisk eggs, then blend with almond butter, pumpkin, and honey.
  3. In a separate bowl, combine almond flour, baking soda, salt, and cinnamon. Slowly add to the wet mixture.
  4. Fold in chocolate chips.
  5. Distribute the batter evenly into muffin cups with paper liners.
  6. Bake for 18 minutes or until a toothpick comes out dry from the center.

Baking Tip: Let the muffins cool before peeling off the paper liners so the liners don’t stick!

Apple Almond Farro Salad 

This refreshing salad combines the crispness of apples, the nuttiness of farro, and the unique touch of Maisie Jane’s almond butter for a perfect lunch or side dish. 

Salad Ingredients: 

  • 1 cup uncooked farro or pearled barley, rinsed 
  • 2 medium crisp red apples (e.g., honeycrisp, pink lady, etc.), cored and diced 
  • 1 bunch scallions, well-trimmed and thinly sliced 
  • 1/2 cup Maisie Jane’s sliced almonds, lightly toasted in your toaster oven for a few minutes if desired 
  • 1/3 cup dried currants, raisins, or dried cranberries 

Dressing Ingredients: 

  • 3 cups filtered water 
  • 1/4 cup apple cider vinegar 
  • 1/4 cup pure apple juice 

Directions:  

  1. Mix all salad ingredients together in a bowl.  
  1. In a separate bowl mix all dressing ingredients together. 
  1. Drizzle desired amount of dressing on salad and enjoy!  

Mixing tip: Be sure to stir the almond butter well before measuring!
