Sweet Potato Bowl for Breakfast

Serves: 3 cups
INGREDIENTS
- 2 cups rolled oats
- ⅓ cup almond meal
- ⅓ cup slivered almonds, roughly chopped
- ¼ cup raw buckwheat
- ¼ cup sunflower seeds
- ½ tsp salt
- 1 tsp cinnamon
- 3 tbsp coconut butter
- 1 tbsp coconut oil
- ¼ cup maple syrup
- 1 tsp vanilla extract
INSTRUCTIONS
- Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
- Mix the dry ingredients in a large mixing bowl until combined.
- Heat the coconut butter and oil over low heat in a small saucepan just until melted. Then, remove from heat and whisk in the maple syrup and vanilla extract.
- Add the wet mixture to the dry ingredients and stir until everything is evenly coated.
- Place the mixture onto the lined baking sheet, making sure it is well packed together, but not too thick. It should form one single even layer.
- Bake the granola for 25 minutes, then take it out of the oven and let cool completely, at least 20 minutes.
- Using a spatula or your hands, break the granola into large chunks.
NOTES
Store this granola at room temperature in an airtight container to keep it fresh and crunchy.
