Serves: 3 cups

INGREDIENTS

  • 2 cups rolled oats
  • ⅓ cup almond meal
  • ⅓ cup slivered almonds, roughly chopped
  • ¼ cup raw buckwheat
  • ¼ cup sunflower seeds
  • ½ tsp salt
  • 1 tsp cinnamon
  • 3 tbsp coconut butter
  • 1 tbsp coconut oil
  • ¼ cup maple syrup
  • 1 tsp vanilla extract

INSTRUCTIONS

  1. Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
  2. Mix the dry ingredients in a large mixing bowl until combined.
  3. Heat the coconut butter and oil over low heat in a small saucepan just until melted. Then, remove from heat and whisk in the maple syrup and vanilla extract.
  4. Add the wet mixture to the dry ingredients and stir until everything is evenly coated.
  5. Place the mixture onto the lined baking sheet, making sure it is well packed together, but not too thick. It should form one single even layer.
  6. Bake the granola for 25 minutes, then take it out of the oven and let cool completely, at least 20 minutes.
  7. Using a spatula or your hands, break the granola into large chunks.

NOTES

Store this granola at room temperature in an airtight container to keep it fresh and crunchy.
